• 3T oil
  • 1T vinegar
  • 2t honey
  • 1/4t lemon juice
  • pinch of sea salt

Mix vinegar, lemon juice, and salt in a glass or stainless mixing bowl. Whisk in oil a little at a time. It will stay stubbornly separate at first, and then suddenly turn into a creamy mess when it emulsifies. Once all the oil is added, whisk in the honey. Drizzle over or toss into leafy greens or whatever salad.
