!!! Dark Rye Bread !! Dry: * 2c high-gluten bread flour * 1 1/2c whole rye flour * 1/4c rye flakes * <strike>1/2t fennel seed</strike> * <strike>1t</strike> 2t caraway seed * 1T dutched cocoa powder * 3T ground flaxseed !! Wet: * Beat 1 small egg in 1/4c cold water * Add strong hot black coffee up to 1 1/4c, stirring constantly. * <strike>3T</strike> 2T butter * 1 1/2t coarse sea salt * <strike>2T unsulphured molasses</strike> * 2T dark or robust molasses * 1T packed brown sugar * <strike>1t vinegar</strike> * 3t quick-rise powdered yeast * 1t unrefined cane sugar Add all ingredients into bread machine, push 'go', duck and cover. 1.5lb light wheat spin cycle.
