Dark Rye Bread

Dry:

  • 2c high-gluten bread flour
  • 1 1/2c whole rye flour
  • 1/4c rye flakes
  • 1/2t fennel seed
  • 1t 2t caraway seed
  • 1T dutched cocoa powder
  • 3T ground flaxseed

Wet:

  • Beat 1 small egg in 1/4c cold water
  • Add strong hot black coffee up to 1 1/4c, stirring constantly.
  • 3T butter
  • 1 1/2t coarse sea salt
  • 2T unsulphured molasses
  • 2T dark or robust molasses
  • 1T packed brown sugar
  • 1t vinegar
  • 3t quick-rise powdered yeast
  • 1t unrefined cane sugar

Add all ingredients into bread machine, push 'go', duck and cover. 1.5lb light wheat spin cycle.
