Dark Rye Bread
Dry:
- 2c high-gluten bread flour
- 1 1/2c whole rye flour
- 1/4c rye flakes
1/2t fennel seed1t2t caraway seed- 1T dutched cocoa powder
- 3T ground flaxseed
Wet:
- Beat 1 small egg in 1/4c cold water
- Add strong hot black coffee up to 1 1/4c, stirring constantly.
3T2T butter- 1 1/2t coarse sea salt
2T unsulphured molasses- 2T dark or robust molasses
- 1T packed brown sugar
1t vinegar
Atop:
- 3t quick-rise powdered yeast
- 1t unrefined cane sugar
Add all ingredients into bread machine, push 'go', duck and cover. 1.5lb light wheat spin cycle.
