- 3T butter
- 1 medium onion, diced
- 3 cloves garlic, sliced
- 1lb mushroom caps and stems, sliced
- 2C veal or beef stock
Melt butter in frying pan over medium heat. Sweat onions and garlic until translucent, about 2-3 minutes. Add sliced mushrooms and fry until reduced in size, about 3-4 minutes. Optionally glaze with wine, then cook off. Add veal or beef stock, and reduce to a thick sauce, about 10-15 minutes.
Schnitzel
- 4 pork loin chops, about 6oz each
- salt, pepper, paprika to taste
Cover each chop with plastic wrap and pound with meat mallet until even. Season both sides with salt, pepper, and paprika. Heat oil until its smoke point, then sear each chop about 2-3 minutes per side.
Place chop on plate, pour over sauce, and enjoy with french fries.
