Old Fashioned Cheese Cake
- 1 Graham Cracker crust (8 or 9 inch)
- 8 oz. Cream Cheese - softened
- 1/2 cup Sugar (I used fructose)
- 1 Tbsp Lemon Juice
- 1/4 tsp Vanilla
- dash of Salt (Sea Salt)
- 2 Eggs
- Topping (recipe follows in directions)
- fresh Fruit or Fruit topping (optional)
Preheat oven to 325 degrees. In bowl, combine cream cheese, sugar, lemon juice, vanilla and salt. Mix well until blended. Add eggs, one at a time, mixing well after each addition. Place crust on baking sheet; pour in filling. Bake for 25 to 30 minutes or until inserted knife comes out clean. Topping: Combine 1 cup sour cream, 2 tablespoons sugar and 1/4 teaspoon vanilla. Carefully spread over pie. Continue baking 10 minutes; cool. Chill 3 hours. Top with fresh fruit or canned filling. ENJOY!
Don't forget the "real" whipped cream. ;o}
P.S. I did have to bake it considerably longer than 30 minutes for the first phase, though. I think it was about 53 minutes - this time. But that could just be my ailing oven.
