version 2

  • 1/2 medium onion, chopped coarse
  • 2c chopped ham
  • 2c prepared rice, cooled
  • 2 eggs
  • garlic powder, paprika, salt to taste
  • soy sauce

Over medium heat:

  1. Fry chopped ham until lightly crisped. Remove from pan.
  2. Fry chopped onion in 1tbsp butter or oil until golden
  3. Add rice, stir well.
  4. Continue frying, stirring occasionally, to toast rice
  5. Crack eggs into pan one at a time, stirring well after each to evenly coat the rice
  6. Stir occasionally while frying, until egg is fully cooked.
  7. Season to taste with garlic powder, paprika, and salt; stir well
  8. Liberally soak the rice with soy sauce, but do not drown. Stir well once you hear the soy sauce sizzling on the hot pan under the rice.
  9. Turn off heat, stir, serve, and enjoy
