- 1/2 medium onion, chopped coarse
- 2c chopped ham
- 2c prepared rice, cooled
- 2 eggs
- garlic powder, paprika, salt to taste
- soy sauce
Over medium heat:
- Fry chopped ham until lightly crisped. Remove from pan.
- Fry chopped onion in 1tbsp butter or oil until golden
- Add rice, stir well; continue frying, stirring occasionally, until rice is evenly toasted
- Crack eggs into pan one at a time, stirring well after each to evenly coat the rice
- Stir occasionally while frying, until egg is fully cooked.
- Season to taste with garlic powder, paprika, and salt; stir well
- Liberally soak the rice with soy sauce, but do not drown. Stir well once you hear the soy sauce sizzling on the hot pan under the rice.
- Turn off heat, stir, serve, and enjoy
Serves two very hungry individuals.
