* 3T oil * 1T vinegar * 2t honey * 1/4t lemon juice * pinch of sea salt Mix vinegar, lemon juice, and salt in a glass or stainless mixing bowl. Whisk in oil a little at a time. It will stay stubbornly separate at first, and then suddenly turn into a creamy mess when it emulsifies. Once all the oil is added, whisk in the honey. Drizzle over or toss into leafy greens or whatever salad.
